This recipe for sweet potato chilli pie, like many of our recipes, is packed with nutrients and is a great healthy and tasty meal option.
It?s a?great recipe for anyone following a ?Paleo? diet ?(if you eat sweet potato!), but it can also?easily be made vegetarian by replacing the beef mince with quorn!

Ingredients
For the Chilli?
1tbsp coconut or olive oil
400-500g beef mince
4 cloves garlic?(finely chopped or crushed)
1 large red onion (finely diced)
4-6 sticks of celery (finely chopped)
1 large red pepper?(finely chopped)
1 large green pepper?(finely chopped)
1 can chopped tomatoes
3 red and/or green chillis (finely sliced)
1 tbsp coco powder
2tsp ground cinnamon
Salt and Pepper (to taste)

For the Sweet Potato Mash?
750g sweet potato (peeled and chopped)
25g butter

Method
1. Heat the oil in a frying pan and cook the garlic and onions until they start to soften.
2. Add the diced beef to the pan and heat for approx. 2-4mins.
3. Add all the ingredients to a slow cooker and cook on a Low heat for 6-8hours.
4. When the chilli is done cooking, preheat the oven to 180 degrees.
5. Boil the sweet potato until soft. Drain away the excess water then add the butter and mash the potatoes (use a hand blender to get the mash really smooth).
6. Put the chilli in an oven proof dish and cover with the mash potato, then place in the oven (uncovered) for 20-30minutes.
7. Serve immediately with a side-salad or your choice of cooked veg! (and store any leftovers in the fridge for a tasty, no-fuss lunch tomorrow)

N.B:?If you don?t have a slow cooker, simply add all the ingredients to a large saucepan along with approx. 250ml of water, bring to the boil then cover and heat on the lowest setting for 3-4 hours, stirring every hour.
